I wanted some of this over 50 year old culture and found a person online that had some and has given hundreds of people dry samples. I now have it growing in a crock. on my counter, she had to send it to me twice because I killed the first batch but I now make sourdough biscuits at least once a week and I dehydrate about a pint a week for storage. I am going to try to make my own starter this summer when I am at the tent (if you watch those videos I have) so I can compare an old Alaskan starter to what will then be my northern MN starter. My friend does it. Mix some water and flour, leave it outside until it starts to rise (it will have a fermenting smell) bring it indoors and store in a jar in a cool place; when it stops rising, it's ready. There are so many yeasts in the air you might get a poor one, use a couple of samples at different times in the year, and add flour and water to cultivate one you like. You just mix flour and water and let it sit out in room temps with a paper towel over it. In 3 or 4 days it will be ready to use. Google beer bread instead Joe. Room temperature beer will take the place of yeast, and you can vary the flavor of the bread by using different beers, or adding herbs to the bread before baking. Baking Powder has a short shelf life also. Baking Soda will last indefinitely but it is "single acting" so mix it and get it in the oven as soon as possible. I would try making Bannock or Hard Tack. sourdough is easy, as long as you pay regular attention to your starter. i've killed a couple, lol. but that being said, i suspect my stored yeast will outlast my lemon juice by a long shot. i think you'd get the same results from baking soda and vinegar though. i add a tablespoon of vinegar to my whole wheat yeast bread to improve the texture and you can't taste it at all. so there's another alternative. :-). Just as long as you don't want it to taste like yeast bread, and so long as you don't want it to rise a second time. The little 'ump' you got out of the soda and lemon just was all there is. Once the bubbles disperse, which is in about 20 seconds, that's all there is. However, soda is a leavening agent on its own, and will cause your bread to rise slightly, but it will be a heavy bread, just like Irish 'soda' bread, hence the name.
