    Hi joe, Here is a great recipe for sour dough starter yeast. title of the video is ~ Make a Sourdough Starter by kvalimad2. Thank you but I will let you in on a little secret that I have not done a video on yet. If you have watched the documentary's or videos or whatever they are called like "Alone in the wilderness" and others on Dick Proenneke or if you have ever read his 500 page journal (very interesting) you see his famous sourdough starter he had. I wanted some of this over 50 year old culture and found a person online that had some and has given hundreds of people dry samples. I now have it growing in a crock. on my counter, she had to send it to me twice because I killed the first batch but I now make sourdough biscuits at least once a week and I dehydrate about a pint a week for storage. I am going to try to make my own starter this summer when I am at the tent (if you watch those videos I have) so I can compare an old Alaskan starter to what will then be my northern MN starter. I love the flavor and texture and it is good for you. Pancakes, bread,English muffins, cakes they all taste good and I find it easy. For some things you let it sit, for a others add baking soda and it rises quick.

    Yep, I have some that I harvested last year, though not as effective as bought bread yeast it takes a bit of getting it "right" - nice raise rather than flattening out and hard crust. I got it from Blackberries from my garden, just a handful in a jam jar, wait till you get bubbles (about 3 - 4 days), then strain and add 1/2 cup of flour, and throw out 1/2 each day while adding a little more water and flour each day until it froths over! and you have a good batch.. It's easy and good! try it!

    My friend does it. Mix some water and flour, leave it outside until it starts to rise (it will have a fermenting smell) bring it indoors and store in a jar in a cool place; when it stops rising, it's ready. There are so many yeasts in the air you might get a poor one, use a couple of samples at different times in the year, and add flour and water to cultivate one you like.

That is how sourdough starter is made. You just mix flour and water and let it sit out in room temps with a paper towel over it. In 3 or 4 days it will be ready to use. Sourdough is acidic so baking soda is usually used to react with the acids to promote rise. One can also use campfire ashes in place of baking soda. Enjoyed the video. Thanks again.     yeah good idea, we call it living yeast here. We keep it in the "airing cupboard" or you can keep it in any warm dark place. We feed it flour once a day to keep it alive.

    I always enjoy your did you know stuff! I plan on using raisin water and potato water for my yeast alternative in the bread - and like some of the other folks here making a sourdough starter or just a plain biga. But for all intensive purposes - I dehydrate some raisins - vac sealed them and left them in a bucket.

    Google beer bread instead Joe. Room temperature beer will take the place of yeast, and you can vary the flavor of the bread by using different beers, or adding herbs to the bread before baking. A case of cheap beer is 24 -48 loaves of easy bread.

Baking Powder has a short shelf life also. Baking Soda will last indefinitely but it is "single acting" so mix it and get it in the oven as soon as possible. I would try making Bannock or Hard Tack.
    sourdough is easy, as long as you pay regular attention to your starter. i've killed a couple, lol. but that being said, i suspect my stored yeast will outlast my lemon juice by a long shot. i think you'd get the same results from baking soda and vinegar though. i add a tablespoon of vinegar to my whole wheat yeast bread to improve the texture and you can't taste it at all. so there's another alternative. :-).

    Just as long as you don't want it to taste like yeast bread, and so long as you don't want it to rise a second time. The little 'ump' you got out of the soda and lemon just was all there is. Once the bubbles disperse, which is in about 20 seconds, that's all there is. However, soda is a leavening agent on its own, and will cause your bread to rise slightly, but it will be a heavy bread, just like Irish 'soda' bread, hence the name. I'll be interested to see what you think about the bread.
